Description
These Pastelitos are crispy, golden pastries filled with quince paste or sweet potato jam, then deep-fried until perfectly flaky and glazed with a sweet honey syrup. A beloved treat in Argentina, Uruguay, and the Caribbean, pastelitos are often enjoyed during special occasions and holidays. With their light, airy layers and deliciously sticky finish, they’re simply irresistible!
Ingredients
For the Dough:
2 cups all-purpose flour
¼ tsp salt
3 tbsp unsalted butter, softened
½ cup water (adjust as needed)
1 tsp white vinegar
For the Filling:
½ cup dulce de membrillo (quince paste) OR sweet potato jam
1 tbsp warm water (to soften the paste)
For Frying:
2 cups vegetable oil (for deep frying)
For the Glaze:
¼ cup sugar
¼ cup water
1 tbsp honey
Instructions
1-Make the Dough
- In a bowl, mix flour and salt.
- Add butter and rub it into the flour until crumbly.
- Gradually add water and vinegar, kneading until a smooth dough forms.
- Cover and let rest for 30 minutes.
2-Roll & Cut the Dough
- Roll the dough out very thin (about ⅛ inch thick).
- Cut into small squares (~3 inches each).
- Stack two squares per pastelito, brushing a little water between layers.
3-Add the Filling
- Soften the quince paste (or sweet potato jam) with a little warm water.
- Place 1 tsp of filling in the center of each pastelito stack.
- Press edges lightly to seal (don’t press too hard—leave some space for puffing!).
4-Fry Until Golden
- Heat oil to 350°F (175°C).
- Fry 2-3 pastelitos at a time, flipping until golden brown and puffed (~2 minutes per side).
- Remove and drain on paper towels.
5-Glaze & Serve
- In a saucepan, simmer sugar, water, and honey until syrupy (~5 minutes).
- Brush glaze over warm pastelitos and serve!
Notes
✔ Roll dough thin – This creates the signature flaky layers!
✔ Use high-heat oil – Vegetable or sunflower oil works best.
✔ Don’t overfill – Too much filling can make them burst open while frying.
✔ Serve immediately – Pastelitos are best fresh & crispy!
✔ For extra shine, sprinkle with a dusting of powdered sugar after glazing.
